Happy Friday everyone! Okay, I know I’ve done a terrible job of posting regularly. I refuse to feel guilty about it though because one of my new year’s resolutions is to feel less guilty, less often, and since it’s only February, I’m still stickin’ to it (give it a couple of months). I’ve said it before, I blame it entirely on the Catholic guilt gene that I inherited from my mom. I’ve never even visited a Catholic church in my 38 years of life, but have been plagued with Catholic guilt…. God does have a sense of humor.

I’ve compiled a whole list of excuses for not blogging, first being the fact that my real job takes up most of my time (whine, wine, I know!). Secondly, I’ve come to the recent realization that the boy is never going to be 10 again, and I don’t want to look back and wonder where the time went. Then, there is the Naughty One who barks incessantly at me when I get on my laptop. I have to video it so you get the full effect. How did I end up with a blog-hating dog? It’s bizarre.

But I’ll stop here with the excuses because really they’re just excuses. Don’t you agree that even when life’s crazy you make time for what’s important? So here is the honest truth, I’m struggling with the whole blogging thing right now. I don’t do this for money (see, there are no ads), I don’t try to market myself; I’m terrible at networking, and I don’t have time to worry about my blog stats,…that’s not why I started this blog. I started this blog because I love to bake and learn from people who know what they’re doing. As things unfolded,  I realized that there is more to this than baking. It’s about trying to find the humor in my crazy life, and discovering the blessings that often come out of the insanity. It’s also been about connecting with other people who share my passion and finding people who have lived paralleled lives. You’ve given me hope for the next chapter of my life!

If you know me personally, you probably know way too much about me… Really, I’m sorry! I live in the details. Recently, I was with a group of friends and one alluded to the “back story” of my blog. Being the all-American girl that I am, I just don’t believe in censorship. In the blogging world, you can’t control who reads what you write, and that is a HUGE struggle for me. I don’t like feeling like I have to hold back. Hmmmm…. maybe one day, I’ll make the back story, the published story (wouldn’t that be fun?).  For now, I’ll try to work through my blogging issues and get back to baking!

There are sweeter things to discuss today… these Peanut Butter, Pretzel, Chocolate Chip, M&M bars.

I completely screwed up the recipe and added the peanut butter to the batter. The original recipe has you mix the peanut butter with the melted chocolate to drizzle on the bars. But you know what…. these turned out awesome! LOVE when that happens! One day I will learn to read a recipe in its entirety before jumping in.

One of the best parts of this is the pretzel, chocolately, topping! I cut these into bars and put all of the topping pieces that had fallen off in a bowl and left for work. When I came home, my mom confessed to eating it and asked me to make a batch of just the topping for a Sunday football party she was going to. We used yellow and green m&m’s because these were big Packers’ fans. We also added a cup or so of salted peanuts.

These would be fun to make with M&M team colors for a Super Bowl party, or an end of season kids’ party. Definitely a recipe worth repeating!

Peanut Butter, M&M, Pretzel Bars

Adapted from Food and Wine

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 sticks unsalted butter, softened

¼ cup peanut butter

1 cup light brown sugar

1/2 cup sugar

2 large eggs

2 teaspoons pure vanilla extract

One 12-ounce bag semisweet chocolate chips

1 1/2 cups mini pretzels, coarsely chopped

1 ½ cup M&M’s

Preheat the oven to 350°. Line a 9-by-13-inch pan with parchment paper allowing paper to hang over sides.

In a bowl, whisk the flour, baking soda and salt. Using a mixer, beat the butter and peanut butter with both sugars at medium speed until light and fluffy, about 1 minute. Beat in the eggs and vanilla extract. On low, beat in the dry ingredients, just until incorporated. Stir in the chocolate chips and ¾  cup of the pretzel pieces, and ¾ cup of the M&M’s.

Spread the batter evenly in the pan. Press the batter down with a spatula. Bake for approximately 25 minutes, until golden brown. The middle might be a little gooey but that is ok, the bars will set up. Transfer the pan to a rack. In a bowl, melt chocolate chips in the microwave, stirring every 30 seconds until smooth. Sprinkle the bars with remaining pretzels and remaining M&M’s. Drizzle with melted chocolate.  Let cool until set.

Lift parchment paper out of pan. Use a knife to go around the side of the pan to loosen the bars. Cut the bars in squares and serve or store in an air-tight container.

These milk cartons are made from a free printable at The Sweetest Occasion. They’re the perfect little treat filled with some homemade cookies.

This card maker is kind of clever. You go to the site, type in your message, and it puts your message in a heart template. I think little ones would have fun making these for their grandparents and other special people.

Goldfish valentines …so simple and so cute! The pillow boxes can be ordered online at Papermart. I’ve really liked all of the products I’ve gotten from Papermart. They have a huge selection.

Don’t you always see millions of these at Michaels in the check-out line for practically nothing? Really, don’t you wonder how many billion of these glow sticks exist. This freebie is on The Teacher Wife Blog.

I haven’t seen this ball valentine idea before, but I do know kids love all of the little crap. Sorry, I don’t know what else to call it (and crap is not considered a bad word in my house).  Post birthday party, in our house, we dump out the favor bag, look at all of the fun crap we’ve gotten, never ever play with the crap, but refuse to part with it, and then it somehow magically disappears once the boy has forgotten about it.

This one is simple and can be personal to your valentine. It’s a fill in the blank treat bag. I love you more than ______________ loves _____________.

I also like the “Keep Calm” print because lord knows I need to be reminded to keep calm on a regular basis. This Saturday is the biggest event of the year that I coordinate. We are testing over 1200 kids, double what our big day normally is. I’m praying I can keep calm and trust that things will go smoothly. By the way, rain is predicted Saturday… 2400+ wet children and parents. Sounds like fun, doesn’t it?

I’ve avoided Pinterest for quite some time. I don’t need one more social media site to suck up my time (at least I didn’t think I did). So I am warning those of you who have been leary, you will get sucked in. Remember the days of clipping pictures and recipes out of magazines and putting them in different file folders ~ never to be seen again? This is the same concept except everything you see online that you like you can “pin” to one of your online bulletin boards. The fun part is you can see what others are pinning… a plethora of ideas that has the potential to suck up a lot of your free time. But I highly recommend that you get on board because it’s VERY cool, and when you do, follow me so I can follow you back and see what you’ve discovered. Maybe one day… Yes Pinterest lets those of us who are house poor DREAM!

Okay, here’s what worries me the most about Pinterest. You see, I’m finally at the point where I feel like I need someone else in my life to love. It’s taken a LONG time, and it might take even longer for me to find him because I refuse to settle. I think in the meantime, this little pup may fill that void.

There’s never a dull moment around here. The boy has been sick again for the past two days, still not keeping food down. Hoping we get to the bottom of what’s causing this. In addition to being struck with more illness, it also happens to be what I refer to as “testing season”, my busiest time of year at work. Thank goodness for friends and family. They keep me sane. It’s probably for the best that I’m taking a break from my Kitchen-Aid. I have some catching up to do on posting cookie orders that I did right before Christmas.

This was an order for Sabrina, who was having a Willy Wonka themed party for her son’s birthday. Sabrina ordered Alice and Wonderland cookies from me last year for a baby shower. Sabrina comes up with great party themes… so many fun cookie options.

 Below are photos of the cookies individually and a few helpful hints and links about how to make them.

The wonka bars were cut out with a cardstock template I made. The dark chocolate brown icing color was made using Americolor’s brown combined with a little of the Super Black to get it a deep brown, chocolatey color.

In a previous post, I shared two different ways to make these peppermint candies. I prefer the sparkly sanding sugar option!

I love making cookie lollipops! For a step by step tutorial on how to make them, you can read this post.

The golden tickets were also made using a cardstock template. In order to get the gold icing to sparkle, I used Duff’s gold graffiti spray. You spray it onto the cookie once the royal icing had dried completely. I love this product! It covered evenly, dried quickly. and made these cookies super sparkly! Wilton makes a similar product, which I haven’t tried yet. Both brands are sold at Michael’s and are reasonably priced.

Hope everyone had a great Christmas and New Year with your families and friends! No desserts today, but I’m guessing this time of year we have all resolved to get back in shape and ban all things sweet (at least for a week or two).

The boy and I spent the New Year in DC visiting our BFF’s who moved there last winter. It wasn’t until I got away from my regular life that I realized what a stress case I really am (it’s kinda scary!).  For the first time in ten years I slept through the night without waking up, and I did it six nights in a row! I really did not want to come home, even with our Southern California weather in the 80′s. I also discovered that the boy who refuses to wear anything other than short sleeves, shorts, and flip-flops will, by his own choosing, wear a jacket in 40 degree weather.

The cold didn’t stop us from seeing the sites. We crammed a ton of stuff into one week.  One of our days was spent at Arlington and the Pentagon. This was our first visit since 9-11. We went to my Uncle Karl’s grave site and went to see the memorial… both places took my breath away. To see so many lives being honored, I couldn’t help but think of all the blessings in my life… how easy it is to take so much for granted. Though not ready to get back to reality, the week was incredibly therapeutic. Spending time with those we love really is the best therapy there is ~ better than wine or chocolate!

I can’t wait to see what 2012 has in store!
