It’s a glorious Monday around my house and I don’t think I have ever described a Monday in those terms. Spring Break has finally arrived! I’m not sure who is more excited my son, the pup, or me. It’s in the 80s here and could not be better weather for our time off. I’m going to savor the beauty of this week – no returning work calls, no checking emails excessively, and no thinking about the reassignment of my job (which will be official the day after the break). I’m looking forward to a week full of kids running in and out of my house, filling hundreds of Easter eggs, and enjoying many “Happy Hours” with my girlfriends.
I’m also looking forward to all of the yummy Easter food. I’m craving a piece of carrot cake – badly. No, I don’t dare make the carrot cake (at least not yet) or I’m afraid I’ll eat the entire thing. It’s also pie week for the “You Want Pies With That?” group, so I have to save my calories because my pie is going to be a whopper!
In order to satisfy this carrot cake craving, I shook up this carrot cake martini. I rimmed the martini glass with cheesecake icing and sprinkled cinnamon sugar on top of the icing. The icing is one of the best parts of the carrot cake so I couldn’t leave that out. This is definitely a dessert martini. I’m thinking of serving this at our “Egg Hunt After Dark” party this week. Enjoy this week before Easter and take note of all of the blessings that surround you!
1/2 oz. Vodka
1 oz. Goldshlagger or cinnamon schnapps
2 oz. Bailey’s
2 oz. Butterscotch schnapps
a few splashes of cream
Rim a martini glass in cream cheese icing and sprinkle with cinnamon sugar. Add all ingredients in a shaker filled halfway with ice. Shake and pour!
