4th of July Cake Push-Up Pops… My New Favorite Treat!

How adorable are these for the 4th of July? It’s funny what I get excited about these days… cute boys men (oops… boys probably isn’t politically correct when you’re almost 40 and a teacher), new shoes, whipped-cream flavored vodka, and now add to that list these cake push-up pops.

Remember push-ups as a kids, those orange creamy  treats? My sis and I LOVED them! This is a fabulous new twist. Some people refer to these as cake shooters ~ add a little vodka and I promise to call them shooters too.

Cake push-ups/shooters whatever you prefer to call them, can be bought in bulk here. I recognize most of you aren’t as insane as I am and don’t plan on buying these by the hundreds, so if you only want to start with a dozen or two, head over to the Etsy shop Cup Kates Event Design and buy them. I will warn you these little contraptions are not always easy to find and Kate sells through them pretty quickly.  If you can’t find them and you happen to know where I live, I do have a nice stash on hand and might be willing to part with a few!

6 reasons I’m in love with cake push-up pops…

  • They’re portable. They even come with lids. Pop them in the cooler and they’re the perfect dessert for a beach or pool party.
  • They’re portion control…it’s bathing suit season, enough said!
  • Toss them or wash them… They’re easy to clean, but not too pricey, so you won’t feel guilty if your pool party guests toss them.
  • They’re versatile ~ These aren’t just for frosting and cake. I’m thinking ice cream cakes, strawberry shortcake, s’mores, chocolate mousse… the possibilities are endless.
  • There is nothing wrong with reliving your childhood (unless you’re a dad who has decided your son is going to be the professional ball player you always dreamed of being).
  • It’s about the novelty friends ~ I’m not ashamed to admit it, I love when I make something pretty simple that guests have never seen before and they gush on and on about how creative I am. We all thrive on a little praise, right?

Here’s the how-to: (see photos above)

Step 1: Clean out push-up containers and dry thoroughly.

Step 2: Put push-up pieces together.

Step 3: Make your favorite cake in a 9” X 13” pan. Cool cake completely. Using a circle cookie cutter, or the round part of the push-up pop to cut out cake circles.*

Step 4A: Brush cake crumbs off of cake circles and freeze in an airtight container, layering circles with waxed papers. Freeze until firm (1 hour or even overnight is fine).

Step 4B: Remove cake circles from the freezer. Use a serrated knife to cut cake circles in half.

Step 5: Prep the icing. You can make it from scratch, but store-bought works just as well. To obtain dark colors, use gel colors, such as Americolor or Wilton. If you don’t have piping bags, use a Ziploc bag and cut a small piece off of the corner to pipe frosting. Put push-ups together alternating between a layer of cake and a layer of icing.

*Another option (I haven’t tried yet) is to make cupcakes in a mini-muffin pan, instead of cutting the circles out of the cake pan.

Golf Cupcakes… The 18th Hole Never Looked So Good!

Okay, it’s Monday and there’s no martini… so sorry! I’ll make it up to you next Monday, promise. Have you seen the Whipped-Cream flavored vodka? I’ll let you know how it is next week. I have to say, I’m intrigued.

I hope you had a great weekend and a great Father’s Day! The boy celebrated with Matt during the day, and then we BBQ’d with my mom and dad.  Matt came by, too, for a tough competition of handball-baseball. Having a great relationship with Matt, my ex-husband, means I still get the privilege of watching the interaction between the boy and his dad. The adoration for one another makes me happy!

 If you know my dad, you already know how lucky I am to be his daughter. I can’t tell you have many times he’s dropped everything to attempt to get my one of my possessed smoke detectors to stop beeping.  They really are possessed. Brand new batteries and they still go off randomly, between the hours of 10PM and 5AM. Seriously, why don’t they ever beep during the daytime? Anyway, with anything that goes wrong in my life, my dad is right there helping to fix it.  I’m thankful every day for the time I get to spend with him.

For dessert last night, I wanted to make something fun for my dad, but also wanted to exercise some sort of portion control. Cupcakes are portion control (unless I eat three like I did last night… I had  good intentions. It’s really Kendall Jackson’s fault, if you want the truth) This golf cupcake cake was just the right amount and pretty easy to put together. My dad is a golfer and lives on a beautiful golf course. I am about as good at golfing as I am at getting smoke detectors to stop making me crazy. 

Here are a few steps on how to put this together:

  • Bake up a batch of your favorite cupcakes. This can be as little or big as you want, depending on how many people you’re serving.
  • Once cooled, arrange the cupcakes so that they’re close together in a shape that resembles a golf green.
  • Whip up a batch of your favorite frosting (see my Birthday Party Buttercream recipe below if you need one).  Tint a little more than half of the frosting dark green, the other have stays white. I used Americolor’s Forest Green and Leaf Green to achieve this shade of green.
  • Spread several cupcakes with white frosting (hooray, no piping!). Dip the cupcake on a small plate with graham cracker crumbs to coat. (You could also used crush up Vanilla Wafers).
  • The cupcakes that will be used for the putting green, spread with green frosting. Then dip the cupcakes on a small plate with green sanding sugar. I love the stackable sanding sugars from Williams Sonoma. I used their dark green for these. Wilton also makes a dark green sanding sugar which I  recommend.
  • Fill the remaining green icing in a piping bag. Using Wilton’s tip #233 pipe grass onto the cupcakes holding the piping bag straight up and down. The buttercream needs to be thick and cold to pipe short blades of grass. My buttercream could have been a little thicker this time around, but we made do. 
  • Pipe grass on parts of the green sprinkled cupcakes. To make it look like a cupcake cake, pipe in the spaces where the cupcakes meet with a little grass.
  • To make the golf balls and flag, use fondant. I recommend buying Wilton’s Ready-to-Use white fondant and keep it on hand for projects like these when you just need a little. It stays good if it’s wrapped air–tight. A black food coloring marker was used to make the 18.

Birthday Party Buttercream   (printable recipe)

1/3 cup butter, softened

1/3 Crisco, softened 

pinch of salt

1 1/2 teaspoons vanilla

4-6 tbsp. whipping cream (you can substitute milk or half and half)

4 cups confectioner’s sugar, sifted

 In a large bowl, using an electric mixer at medium speed, beat butter and Crisco. Add pinch of salt and vanilla and continue mixing until smooth. Add in sifted confectioner’s sugar one cup at a time, add a tablespoon of whipping cream in between each cup of sugar, scraping the sides of bowl down each time. Gradually beat on low-medium speed well until smooth and fluffy. (The lows speed keeps it from incorporating too much air into the frosting).  To reach the consistency you need, you may need to add more sugar or more whipping cream. Add food coloring and blend well. Remember, gel or paste coloring will darken over time.

More Baseball Treats… The Sport That Never Ends!

Silly me, I thought baseball had ended. Here is what I’ve come to realize… Baseball NEVER ends. After the spring season, comes all-stars, followed by a slew of summer baseball clinics, and the possibility of joining a travel- ball team. And just when you think you might get a little hiatus, the cycle begins again with fall ball.

For my boy, all of the above is just not enough to satisfy his baseball obsession. My TiVo has been forced to surrender to the onslaught of pro-baseball games over the past few months. First, we watch the games live, but then thanks to TiVo, we get the joy of watching games over and over again (with a running commentary, mind you). I am often expected to drop whatever I’m doing to watch a re-play and hear an in-depth explanation of the play. I know, my sarcasm might make it sound like I’m not a baseball fan, but that’s not entirely true. I do study the players intently. My participation in televised baseball games usually goes something like this… “He’s cute… What’s his name? How old is he? Is he single?”. So in addition to memorizing every player’s stats, the boy is also required to know each player’s age and marital status.

Just when I anticipated a lull with baseball treats, I received another order. Debbie, a Little League team mom was hosting an end-of-season party at her house (brave woman!), and wanted to incorporate the team colors into the party. She ordered baseball cake pops and brownie pops, decorated with sprinkles in the team colors. She also wanted cookies for the boys’ favors, so we made team jerseys with the players’ numbers. This was a fun order to do!

Baseball Cake Pops & Cupcakes… Another season of baseball is over!

The Little League spring season is coming to an end. The boy’s team was defeated after three playoff games. The final score in the last playoff game was 7-6… so close! Matt, Blake’s dad, was sadly out of town for work and wasn’t able to see it live. He and I texted the entire game so he could get the play by play. I think he was just as caught up in all of the action, as I was. We’re both so proud of how much our boy has grown in the game. Hopefully (but I’m not pushing), he’ll continue playing.

At some point, I think the boy is going to look back and remember his season as a Dirtbag as one of his most fun baseball seasons. He had such a great team of boys. They all really bonded. And yes, I just called the boy a Dirtbag. No, that’s not one of my terms of endearment for him; it’s actually the name of his team. The boy was recruited to play for the California State Long Beach Dirtbags this year, and they definitely lived up to their name, getting filthy every game. I love watching the games; I hate washing the baseball pants! What is the secret to getting them white again? It’s not bleach…I’ve done that. And who decided that white pants were the best color for baseball? Dare I say, a man who has his laundry done for him? I’m just guessing.

I have made a ton of themed baseball treats over the last few years. Last week I had an order for baseball cake pops and brownie pops that turned out pretty cute. For the boy’s team party, I did baseball cookie favors and team cupcakes. I know, I wasn’t very original; I did the same thing last year. I sprinkled the cupcakes in the Dirtbag team colors and then topped them with mini baseball cookies and cookies with the Long Beach team logo. I like the look of fondant cupcake toppers, but I find them a bit confusing for kids (or maybe it’s just me). Do the kids actually eat the fondant cupcake toppers? Should there be an announcement ahead of time telling them not to eat them? I wouldn’t encourage the eating of the toppers, but I guess it’s just sugar, right? Anyway, I avoid the issue altogether and make cookie toppers, two desserts in one!

Club Penguin Mini Birthday Cake and Puffle Cupcakes

When it comes to birthdays, cupcakes rule. They’re portable. They don’t require plates or  utensils, and they’re built-in portion control (unless you’re the friend who attended the boy’s party last week that was seen eating at least five cupcakes. I didn’t observe it, it’s just what I’ve been told. I sent him home with very specific instructions that night… Do not tell your parents what you ate tonight. If asked, tell them you had one cupcake. (Was that wrong of me?). In case you’re wondering, he didn’t get sick that night or go into a sugar-induced coma. Phew!!

My only problem with cupcakes is that the birthday boy or girl doesn’t get anything special. My solution… mini cakes. The boy and I discussed video-game themed cake and cupcake ideas and decided to go with Club Penguin. I’m a fan of Club Penguin. It’s one of those rare, happy computer games, full of penguins and puffles, neither of which use guns or explosive devices to kill one another. I’m still not exactly sure what a puffle is, but I knew I could make it in cupcake form. The eyes were made with mini-marshmallows. I cut them in half and the put two together with a dab of buttercream. I used a whole variety of piping tips to make the hair (really out of pure laziness, I didn’t want to stop and wash tips in between). They all ended up looking good. The bright colored frosting was achieved by using Americolor gels, one of my can’t-live-without decorating supplies.

We thought an igloo cake would make the perfect mini cake for the birthday boy, and would look cute on our cake stand. This cake stand is from The Cupcake Tower Shop online at Etsy. It comes in several sizes. I love it because with a little bit of ribbon and double-sided tape, you can coordinate the stand to tie in with the party colors. It also breaks down into small, flat pieces, which makes storage a non- issue.

The igloo cake was made using the Wilton sports ball pan set. Once frosted, we used a toothpick to make the ice block pattern on the cake. I picked up a block of pre-made fondant at Michael’s to make a few penguins and puffles. When covering a cake in fondant, I prefer to make marshamallow fondant. It’s easy to make and tastes much better than traditional fondant. Pre-made fondant is the way to go when making figures. It’s really just edible play-dough, so do not fear! I googled fondant penguins and found a great visual tutorial at bccakes.com .

A few people have emailed asking for my frosting recipe. I know it’s in a few of these posts, and one day (hopefully this summer)  I will get organized and put my go-to recipes on my sidebar.  I have two go-to buttercream recipes I like to make, one for kids and one for grown-ups. If you’re a purist and the thought of shortening is horrifying to you, stop reading now… The birthday party buttercream recipe contains a combination of butter and shortening. It tastes exactly like the bakery frosting we grew up on. Kids love it, and I do too! I believe almost anything is fine in moderation, so a cupcake with a little shortening, no problem… just don’t eat the entire batch like the boy at the birthday party attempted to do. And just so we’re clear… that child shall remain nameless!

Birthday Party Frosting

1/3 cup white Crisco shortening, softened

1/3 cup unsalted butter, softened

4-6 tbsp. whipping cream (milk or half and half are fine too)

Pinch of salt

1 ½ tsp. vanilla

4 cups confectioner’s sugar, sifted

In a large bowl, using an electric mixer at medium speed, beat together shortening and butter. Add whipping cream, salt, and vanilla, and continue mixing until smooth (2-3 minutes). Gradually add in sifted powdered sugar, beat well until smooth and fluffy. To reach the desired consistency, you may need to add more powdered sugar or cream. If you’re piping the frosting, you’ll want a thicker consistency, than if you’re spreading it on. Add food coloring and blend well. Remember, gel or powder coloring will darken over time.

Video Game Themed Party to Celebrate a Decade

My boy turned ten yesterday. I can’t believe we’ve arrived at the double digits.

This year the boy wanted a party. Mind you, this is the boy who hasn’t had a birthday party since kindergarten. He isn’t a huge fan of large celebrations. It remains a genetic mystery how he didn’t inherit the dominant party gene from my side of the family. My niece, who also just celebrated a birthday, clearly inherited the party gene.

Maybe because I was caught off guard that he was asking to have a party, he was somehow able to convince me to let him invite his entire class, all of the boys on the baseball team, and the rest of his best buddies that he hangs out. It was awesome seeing how excited he was for the big event. He checked my Evite account several times a day to see who RSVP’d. Maybe our party-lovin’ ways are wearing off on him!

The boy decided on a video game themed party, so we went big and rented a video game truck. (When I say big, what I mean is that I had to spend my life savings plus his college savings to support this endeavor). And let me tell you… It was completely worth it! Have you seen these game trucks? Sixteen kids sit in front of four flat screen tv’s and get to play their favorite games for two hours. In addition to the games, lights are flashing, and music is blaring. This particular game truck had an open-air stage at the back of the truck for the kids to play Rock Band. This is what heaven looks like in a boy’s world. If you are over eighteen, be warned, it’s like being on the tea cups at Disneyland, you walk out of there with motion sickness wondering how the heck the kids aren’t phased by the sensory overload.

The boy had presents galore to open afterward, but I’d have to say by the look on his face, the best gift was having his parents planning it with him every step of the way. We’ve worked hard to do this and still continue to defy the divorced family stereotypes. It’s not without its challenges. We’re certainly not perfect. Matt’s girlfriend and I had a falling out about a year ago, but in spite of the challenges that come our way, we remain committed to having the best relationship we can for our son.

Here’s a sneak peek at the yummy video-game inspired treats we served. It was a bit of video game & sugar overload… personally, I loved it! This week, I’ll put up a few posts, highlighting a few of the things we made, with a few tips. There were of course, cookie favors to take home (pics. still to come). It was a whirlwind of a birthday weekend, but you only turn ten once in your life, so you gotta go big!

St. Patrick’s Day Cupcakes… Rainbows & Pots of Gold

This St. Patrick’s Day, we’re hosting a baked potato bar for our neighbors and friends. A nice, buttery potato is dessert to me, but the kiddos will probably not agree. What says St. Patrick’s Day (besides a creepy leprachaun)… a pot of gold at the end of the rainbow. Ever since I saw this rainbow tape-like candy I’ve wanted to use it. Have you noticed how many weird candies are out there for kids lately? They just scream “garnish” to me. Yes, the children will actually eat them the gummier, sourer, the weirder the better.

Here’s what you need…

~ Tootsie Rolls

~ Gold sprinkles or sanding sugar (The ones I used are from Williams Sonoma. I love their new line of stackable sprinkles. Wilton makes gold cake sprinkles, which would work great too.)

~ Airheads Rainbow Belts (I found these in the dollar section at Target. I’ve also seen them at the candy store in the mall, and Powell’s, our old-fashioned candy store, so I don’t think they’re too hard to track down.)

What to do:

Frost a batch of cupcakes with your favorite buttercream, or just use the frosting from the jar from the grocery store. You may cringe, but kids love it and it’s a time-saver. To create a cloud-like effect,  pipe using a medium sized open tip (I used Wilton # 12 ). Gently sqeeze the piping bag to make a round dollop on the cupcake. Without lifting the bag up completely, shift the piping bag over and continue making dollops, so that they join together to make a puffy cloud.

Cut a rainbow belt in half and gently insert both sides into the cupcake.

To make the pot of gold, do the following on waxed paper: Cut a tootsie roll in half. Use a paring knife or a toothpick and carve out some of the center of one side. Shape the tootsie roll if you need to. Add the sprinkles to the tootsie roll pot before placing on the cupcake, otherwise you may end up with loose sprinkles on the white clouds. Important note… Do not add the tootsie roll pots until you’re ready to serve, and definitely do not add them the night before. The tootsie rolls will start to melt into the butter cream. I learned this lesson the hard way when making puppy ears for puppy cupcakes for a little one’s party a few years back.

These cupcakes were a test run for our party next week. We served them at our family celebration last night. My mom and the Naughty One just had their birthdays. Does my mom not look amazing in her sixties? The Naughty One is not looking so amazing right now. We haven’t told her that spring training begins soon. We hope to burn off some of that little belly.
