Champagne Pomegranate Cosmo… So Good, You’ll Find Something to Celebrate!

 I don’t drink champagne very often. Why does it seem off limits, unless it’s a special occasion? Who made the rule that champagne is reserved for celebrations, and beer, wine, and martinis are for everyday consumption? (well, maybe not every day) Last week I hosted a girls’ night for the Bachelorette finale. When the girls arrived, we shook up these Champagne Cosmos. Every party needs a signature cocktail, and this is a perfect one for hanging out with the girlfriends in your life. In our jammies, sipping cocktails, and watching trash, I mean reality t.v., with no child or husband interruptions ~ this was every mom’s dream!  

For party favors, I made diamond ring cookies complete with disco dust.  They were sparkly and beautiful, and I’ll have to make them again sometime. I lost almost all of my recent pictures when the Naughty One ate my memory card. For dessert, we had chocolate fondue and rose cupcakes. I was lucky enough to have photoshopped the cupcakes before the pup killed the photo card.

For those of you who don’t like your cocktails too sweet, this is a good choice. When making champagne cocktails, you don’t need to waste your best bottle of champagne. Stick with the middle of the road bottle ~ not cheap champagne, but definitely not the most expensive.

I say we don’t wait for the next “celebration”, let’s find something to celebrate and pop open the champagne. I’m celebrating the fact that there are still four and a half weeks of summer left,  and I already have the boy’s new backpack and school supplies organized (so unlike me!). Champagne Cosmo

1 1/4 cup triple sec

1 1/4 cup Ocean Spray Cranberry Pomegranate Juice

1/2 cup fresh lime juice

4 cups champagne

Fill a cocktail shaker halfway with ice, combine the ingredients above and shake vigorously. Pour into a martini glass and garnish with a lime.

Diet Snappletini… So Sweet, You’ll Never Guess it’s Low Cal

I’ve been addicted to Diet Snapple for a  few years now. I only drink it out of the glass container though. The plastic containers from Costco just don’t do it for me. I’m not sure what that’s about. My current Snapple flavor of choice is Diet Cranberry Raspberry juice. It is sweet and lacks the diet aftertaste that many other diet drinks have. It’s not always available, so when I see it, I buy out the store.

After surrounding myself with fifteen batches of sugar cookie dough last week, my never-ending quest for diet cocktails continues. It occurred to me the other day that Snapple would serve as a great base for a martini.

The key to creating diet cocktails is finding a base that has low or no calories and keeping the ingredients to just a few. Mixed drinks with many different mixers can bring the calories up to a staggering amount. For 1.5 ounces of hard liquor, there is approximately 90-100 calories. This Diet Snappletini is less than 75 calories, and you’ll never guess it was diet. If you decide to shake this one up, and then pour it back into the Snapple container to take to the pool, I promise I won’t tell anyone!

Diet Cranberry Raspberry Snapple-tini

5 ounces Diet Cranberry Raspberry Snapple

1.0 ounce Raspberry Vodka

Pour ingredients in a cocktail shaker filled with ice. Shake vigorously and pour into a martini glass. Garnish with free raspberries or a slice of lime.

Meyer Lemon Drop Martini… Discover the Sweetness!

When life gives you Meyer lemons, take my advice… make Meyer lemon martinis. Oh, how I  adore Meyer lemons. They’re thought to be a cross between a traditional lemon and a mandarin orange.   At first bite, you get that almost unbearable sour taste, but once that diminishes, you discover a hint of sweetness.

Lucky for me, one of my martini lovin’ girlfriends, Laura, just happens to have a Meyer lemon tree with ripe lemons. She and I are back to meeting up at one another’s houses for Happy Hour, instead of our favorite martini bar. We’re both about a week away from summer vacation, and as wonderful as having ten weeks off a year is, neither of us get a paycheck until the end of September. Yikes!  Goodbye ten dollar martinis! It was Laura’s turn to be our bartender, so I ordered a Meyer lemon martini, several days in advance. The secret to Laura’s recipe is to muddle the lemons in the martini shaker before adding the rest of the ingredients and shaking it up. If you don’t have a muddler, you can use the back of a wooden spoon. This martini is a strong one, but great to sip. If you enjoy a traditional lemon drop martini, you’re going to love this one. The cointreau and fresh Meyer lemon juice sweeten it up a bit, without being too overpowering.  

Has life given you any lemons lately? This has been a challenging year for so many of us. Life handed me a few lemons this year in the form of a teacher’s strike, reduction in pay, and uncertainty about the future. Here’s what experience has taught me; when life gives me a lemon, it’s up to me to make it a Meyer lemon. Hidden in every life challenge is a little sweetness. Sometimes we have to make our way through the bitterness first, before we discover the sweetness.

Meyer Lemon Martini

3 ounces Grey Goose vodka

1 ounce Cointreau

2 teaspoon simple syrup

1.5 ounce freshly squeeze Meyer lemon juice

4-5 ice cubes

2 Meyer lemons

superfine sugar, for the martini glass rim

lemon wedges for garnish

Chill martini glasses in the freezer for at least 10 minutes prior to serving. Squeeze the lemon juice and set aside. Place three lemon wedges from the freshly squeezed lemon inside the cocktail shaker. Use a muddler to muddle the lemon wedges. Add ice, vodka, cointreau, lemon juice, and simple syrup into the cocktail shaker. Shake vigorously for 30 seconds. Run the lemon twist around the edge of the chilled martini glass and rim with super-fine sugar. Pour the strained martini into the chilled glasses and serve. Garnish with lemon wedges. (makes 2)

Peach Martini for a Lucky Day!

I’m usually a stickler for being on time ~ not today. I’m posting late today, as things have been a little hectic. I very rarely have a reason to celebrate Mondays, but today I’ve got two reasons to share! I’m celebrating happy hour with this peach cocktail. I have a great peach cobbler ice cream to share later this week, but I know some of you expect your weekly cocktail recipe on Mondays (not mentioning names!)

   Here’s what I’m celebrating… First off, a toast to the winner of the ice cream essentials give-away. Holly in Tennessee had the lucky comment number, and will get all of the great loot. She picked the green ice cream maker, in case you’re wondering! Thanks again to Sur La Table for participating in the give-away. Don’t we love their exclusive Cuisinart colors? The Spice House was also so generous to include their deluxe baker’s spice set. What a treat that set is for anyone who loves to bake. Sara Engram and Katie Luber included their brand-new ice cream cookbook Spice Dreams. These two are the ultimate spice girls, and I can’t wait to try more of their recipes. The Zyliss company included their award-winning scoop, and Sweet Bliss Containers finished off the give-away by including their pint-sized ice cream containers. Cheers to Holly! I just wish I lived closer, so you could bring me some of your amazing butter pecan ice cream.

I have a few other fabulous give-aways up my sleeve for this summer, so keep stopping by! I was so glad to have had the opportunity to connect with so many other bloggers and baking fans from this give-away. That’s what I love about blogging. I love meeting people that share in my passion, and I love all of the new products and recipes I’ve been introduced to along the way!

But that’s not the only reason I’m celebrating today. Let me preface this by telling you that I NEVER win anything. My mom, on the other hand, wins EVERYTHING! The last thing I can remember winning was a case of macademia nuts back when I was my son’s age (and I didn’t even like macademia nuts). But today I won something!! Pizzazzerie is a blog that specializes in entertaining. They had a give-away last week for a Fourth of July prize pack from Hostess Jo. I’m thrilled to have been picked, and will now stop telling people my macademia nut story.

So life is just peachy this week. Two and a half weeks of work, for me, and school, for the boy until summer vacation! This cocktail is perfect for summer vacation, and for enjoying outside on a warm day. It has only three ingredients and will definitely refresh you!

Cheers to giving something to someone else this week, even if it’s helping out someone who needs it, spending 10 minutes of undivided time with a loved one, or picking up the phone to chat with that friend you keep meaning to call.  Nothing feels as good as knowing you’ve made someone’s day!

Just Peachy Martini

2 0z. Peach Nectar (I use Kern’s in the can)

3/4 oz. Peach Schnapps

1 oz. Malibu Rum

Combine ingredients in a cocktail shaker filled with ice. Shake, pour, garnish with a fresh slice of peach, and ENJOY!

Orange Banana Martini ~ Orange ya Glad I Said Martini?

 Seeing how things are going bananas in my life, it seems fitting to go bananas on the blog this week. The results are in… our union voted 87% in favor of striking, and the Board said publicly they won’t back down. It looks like a strike is emminent. My hope, at this point, is that parents in our community continue to support teachers, and not be influenced by the spin factor. I know that I  have little control in the matter, and am on standby waiting to see if the flight is a go or not. And truth be known, I’m not sure whether or not to get on it.

So today, life needs something refreshing ~ something sweet to get rid of the bitterness. I like the flavor of bananas, but am not a huge banana person. I prefer the flavor when it’s combined with another flavor.  The chocolate-banana martini awhile back was a great combo for a dessert martini. This martini is perfect for a warm day.

This time around I’m pairing bananas and oranges. Orange County, at one time was known for its orange groves. Sadly, we’re now known for that group of local housewives! Historically speaking, I think the orange-banana combo can be traced back to all of our childhoods, with that ridiculously annoying knock-knock joke. Funny, how it didn’t seem annoying back then! 

I usually move way too fast to take the time and garnish. I need to get better at garnish because it does just add that extra flare. My mom is the queen of garnish. (God forbid, she forgets the parsley.) I decided to make a twist of orange for the rim of these martinis, and I remembered to grab my camera to share it. There may be a better way, but this worked for me.

Orange Garnish Spirals

First off, cut both ends off of the orange. Make a cut into the orange on one side, without going all the way through on the other side. Next,  remove all of the orange segments with a large spoon or sharp knife. The knife worked best, especially since the peel of this orange seemed particulary thick. Once you’re left with just the peel, roll it up tightly and stick a barbeque skewer through it to hold it in place. You may be able to use a toothpick, if you’re using little oranges. Use a sharp knife to cut the orange peel into slices. It will naturally make a spiral. You may want to roll it tighter before adding a toothpick to to hold each spiral in place. Balance on the rim of a martini glass. This works great with lemons too!

Orange-Banana Martini

1 oz. vanilla vodka

1 oz. banana liqueur

equal parts orange juice and pineapple juice

Combine vanilla vodka, banana liqueur, pineapple juice, and orange juice in a cocktail shaker with ice. The amount of juice depends on how strong you like it. Shake, pour, enjoy!

Island Breeze Martini Because Some Days Require Little Umbrellas!

Spring Break has officially ended. It’s back to school and back to work today, which is why I plan on escaping to a deserted island this afternoon and sipping a cocktail with a little umbrella in it. It’s hard not to be happy when a little umbrella is popping out of your martini glass. We had a fabulous and much needed break ~ not setting an alarm for nine days was heaven!

                                                                                                                                                        I’ve already checked the calendar and there are 10 1/2 weeks until school’s out. I have never wanted summer as much as I have this year. I’m in public education in California ~ need I say more. For the past five years or so, I have been told that my position may be eliminated. This year my position is safe. I know this should seem like victory, but it’s not in this educational climate. I am no longer in the classroom, but still a teacher working in more of an administrative role overseeing a state funded program. My job involves supporting teachers, parents, and advanced students. So here’s the kicker, the teachers in the district may vote to strike at any point in the near future.  It has been an unbelievably stressful situation. Without getting into all of the politics, can I just tell you that teachers are NEVER overpaid.

So, as I am thrown back into the politics and uneasiness of it all, I will keep forging ahead to that happy hour.  Today, I’ll be shaking up this Hpnotiq martini. The bottle has always intrigued me, but it wasn’t until recently that I splurged on one. The liqueur is this amazing hue of blue. It’s not the bottle playing tricks on you. Hpnotiq combines vodka, cognac, and a whole bunch of tropical fruit juices. I was a bit surprised at how tart this tasted. I was expecting a shot of pure sweetness. Pineapple juice is a great mixer to sweeten this up a bit (if you have a need for sweet, like I do!). 

The Hpnotiq website has a ton recipes. They also sell it in little sample-sized bottles. I often opt for these miniature bottles on the first try. It makes it affordable to try, without investing a ton of money.

Cheers to a diving into a crazy week, knowing that there is always a little umbrella available when you need to take cover.

1/2 oz. Malibu Coconut Rum

Splash(es) of pineapple juice

Cadbury Caramel Cream Martini ~ Bunny Approved!

I wish I could hire the little Cadbury bunny that clucks like a chicken to help me sell this martini. Oh, how I love that bunny. Unfortunately, he charges a bit more than this little blog can afford. I can’t believe Easter is in less than a week. This Friday is our annual Egg Hunt After Dark party. The kids all bring their flashlights and Easter baskets to search for eggs. It’s a whole new experience finding them in the dark, and the kids have a blast. I think they have even more fun getting up the next morning to find all of the ones that were not discovered the night before.

We’re serving Italian, but you me, I’m more excited about the dessert and the signature cocktail. Last year I served carrot cake martinis. They were to die for! This year I’ve concocted something new, a Cadbury Caramel Cream Martini. I’ve actually never tried a Cadbury Cream Egg, but I love the commercial – one of the best of all-time. Last week I came across these caramel Cadbury eggs and couldn’t resist. If you’re going to spend your calories on chocolate, go for the See’s or Godiva eggs. Not that these tasted bad, but not worth the hour of jogging to burn it off.

This martini, however, is totally worth the gym time required afterward. I combined several of my favorites, vanilla vodka, creme de cacao, Godiva white chocolate liqueur, and a new favorite, caramel liqueur. YUM! I even went a step further and rimmed it in caramel and sprinkled it with bits of Heath bar. Next time around, I may stick with rimming it with chocolate fudge sauce. The caramel started to drip a bit, even after chilling the glasses. So rim with chocolate, or drink fast, your choice! Can’t wait to shake these up on Friday night!

As for dessert, I’m thinking about cheesecake and those evil Reeses Pieces Eggs. Come back later this week to see how it turns out.

Cadbury Caramel Cream Martini (Makes 2)

(Adapted from the Mint Bar’s Caramel Egg Cocktail Recipe)

3 oz. vanilla vodka

1.5 oz. creme de cacao

1.5 oz. white chocolate liqueur

1 oz. caramel liqueur

splash of cream

Rim martini glass with caramel or fudge sauce and sprinkle on heath bar bits. Swirl chocolate syrup inside the martini glass and chill. Combine vanilla vodka, creme de cacao, white chocolate liqueur, caramel liqueur, and cream into a martini shaker filled with ice. Shake and pour.
