Do you remember that historic day when Coca Cola introduced Cherry Coke? Neither do I. But I do remember ordering this drink as a kid from one of my favorite restaurants.
It’s been 24 years since Cherry Coke came out. Last week, Cherry Coke’s birthday gave me the perfect excuse to make the infamous “Diet Coke Cake” that so many people talk about. I very rarely take the low-cal route when I have dessert. If I’m going for it, it’s got to be the real thing! But this concept intrigued me enough to try the diet option. “Diet”, “chocolate”, and “cupcake” together? Now this I had to see. The recipe is simple. Take any kind of chocolate cake mix and pour a can of Diet Coke in it. Stir it up and bake as the box directs. The carbonation in the soda makes the cake expand.
The only thing I did differently was add two egg whites to the batter. Other bloggers have said this makes it come together better and results in a fluffier cake. These cupcakes were really good! They came out amazingly moist and the hint of cherry was just enough. I topped the cupcakes with a low-fat cream cheese frosting. The cupcakes are definitely good enough to eat without the frosting, but for me a cupcake just isn’t a cupcake without frosting.
Diet Cherry Coke Cupcakes (makes 24)
1 can Diet Coke
2 egg whites
Mix all ingredients together in a large bowl. Bake according to the directions on the cake box.
Flavor Variations
Low-fat Cream Cheese Icing 8 oz. light cream cheese, softened cream cheese, 1 c. marshmallow cream
1 tsp. fresh lemon juice
1 tsp. vanilla extract
1 c. powdered sugar
In a medium bowl, stir together the cream cheese, marshmallow creme, lemon juice and vanilla until well combined. Then gradually beat in the powdered
sugar.
Makes 1 3/4 cups
NOTES : The use of marshmallow creme instead of butter in this easy frosting
recipe keeps the fat, calorie and cholesterol counts low. To simplify
clean-up, spray the measuring cup with non-stick spray before attempting to
measure out the marshmallow cream!

Do you prepare the cake as the box calls for (oil, water) and then add the coke in addition?
Hi Amy, You don’t add the oil and water. The only ingredients are cake mix, egg whites, and Diet Coke. Sounds a little strange, I know. They are good though!
