Almost a year ago, I reconnected with a friend I hadn’t seen in twenty years. We wanted to make a plan to get together and catch up. He asked me to pick the restaurant …such an easy question, right? For the life of me, I couldn’t come up with a place to meet and neither could he. I realized nothing had changed, we both continue to have trouble making decisions. I’m someone who has to analyze every angle before deciding. Should we stay close to home in case we share a bottle of wine? Where can I wear my new pair heels? What price range should I go for? Is he treating? (He better be!!). I admire those of you who BOOM – in a split second make a decision and put it behind you.
If you’re having trouble deciding what to bake, you’ve got to try these peanut-butter, oatmeal, chocolate chip cookies. They’re simple and only use one bowl – Yahoo, less dishes!
Peanut Butter, Oatmeal, Chocolate Chip Cookies
1 c. melted butter
1 c. sugar
1 c. brown sugar
2 eggs
1 c. peanut butter
1 tsp. vanilla
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. uncooked oatmeal
6 oz. chocolate chips
Mix butter and sugars together, add the remaining ingredients and place by spoonfuls on a baking sheet. I use an ice cream scoop and make them pretty big. I also flatten them a little and get them really round before baking them. (They come out looking like cookies from a bakery!)
Bake at 350 degrees for approximately 10-13 minutes. Cool cookies on the pan for 5 minutes. Move cookies to a rack to completely cool.
