I know it’s Tuesday and I always post cocktails on Mondays, but I’m making an exception for the following reasons a) I’ve had a hectic couple of weeks and cocktails make me happy! b) This was a huge hit at a Christmas party I hosted this past weekend and c) I’m just not a fan of Bloody Mary’s. I’ve never been able to drink vegetable juice – even by trying to hide it with the taste of alcohol. We posted it on Monday for all of you Bloody Mary lovers who are looking for a great recipe (according to my mom). I’ll take her word for it.
Turn up your heater, put on your slipper socks, and make up a batch of Jack Frost’s Cranberry Margaritas. This drink is amazing! The best part is that you can make up a batch ahead of time and keep it in the freezer for up to a week. When holiday guests pop over, you’re not stuck behind the blender having people mistake you for the bartender (as happened to me this past month). This grown-up slushee has just enough tart and just enough sweet to keep you coming back for more.
This recipe is adapted from a Betty Crocker recipe (Apparently, Betty Crocker enjoys a margarita too, who would have guessed?)
Jack Frost’s Cranberry Margarita
1 can frozen cranberry concentrate (12 oz.), thawed
1/2 can orange juice concentrate (6 oz.), thawed
1 c. tequilla
1/3 c. triple sec
2 cans Sprite or 7up
5 c. water
1/4 c. lime juice
In a 3 quart container mix all of the ingredients with a whisk until well blended. Cover and freeze at least 24 hours until slushy. Rim margarita glasses with sugar. Scoop 1 c. of the slushy mix in each glass. Pour a dash or two of Sprite or 7 up on top and serve. Keep any leftovers in the freezer for up to a week.
