A few weeks ago, Kim, a friend that I work with asked me to make cupcakes for her boys’ birthday party. She has twins and a third son. Their birthdays are only a few days apart, which means at least while they’re young, she can plan one party for all of the boys. The boys are into magic, so a magician had been hired to entertain the guests.
When little ones are eating cupcakes, I don’t usually use fondant. Kids are going to eat anything you put on a cupcake, and fondant just doesn’t taste that great. Kim loved the idea of cupcakes with rabbits coming out of hats. Her only request was not to use chocolate frosting. A whole gang of boys covered in chocolate frosting, running around her house for a few hours, sounded a bit dangerous. The cupcakes turned out cute, and ended up being two desserts in one.
In a perfect world, I would have been making these in the spring and could have easily purchased bunny Peeps, since those little bunnies are rampant around Easter. Seeing how it’s fall, those little bunnies weren’t available. I came up with a yummy solution, to transform ghost Peeps into rabbits. The rabbits were attached to top hats made out of a chocolate covered marshmallow and an Oreo top. I finished these cupcakes off with mini magic wands made out of little pretzel sticks, and Wilton’s star confetti.
Here’s what’s needed…
oreos- large marshmallows
- mini pretzel sticks
- Peeps
- chocolate candy melts
- royal icing
- Wilton Star Confetti
I made these over the course of a few days.
Day one: Take off cookie tops. Melt chocolate candy melts in a shallow bowl. Coat marshmallow and Oreo tops in chocolate and let set on waxed paper. I dipped just one side of the Oreo.
To make the mini wands, dip pretzels into black colored candy coating and let set. Then, dip the end into white chocolate candy coating and let set.
Day two:Attach Oreo to marshmallow with melted chocolate or royal icing. To make the bunnies, take Ghost Peeps and cut off the bottom half and both arms. Trim the arms in the shape of bunny ears and attach to the top of the peep with royal icing. For variety, make some with just bunny ears. Using pink royal icing, pipe a dot for the nose and fill in the
bunny ears. Melt chocolate. Pour into a Ziploc or piping bag to pip whiskers.
Day three: Attach bunnies to the chocolate hats using royal icing. Bake up your favorite cupcakes. Frost them once cooled and attach top hat with rabbit.

LOVE these rabbit in the hat toppers for cupcakes. I am trying to make them for my son’s birthday this weekend. I melted my candy melts but after I added the black icing color tent the chocolate got all lumpy and thick. I continued to melt it over my double boiler and now the chocolate will not melt back into the smooth texture it was before I added the colored tent. Any suggestions? What type of color tent/food coloring did you use to prevent this from happening?

Such a bummer… I feel your pain! This has happened to me a few times too… so frustrating! The chocolate has seized, and once this happens there is no turning back. You can’t use it to dip. Chocolate and water don’t mix. You said you used the double-boiler method. If any droplets get into the chocolate, it seizes. Sometimes just the steam from a double boiler can do it. I still am learning how to work with chocolate (so much to learn!), but I have figured out how to melt the candy melts without burning or seizing. If you use the double boiler, boil the water and then turn it off. The chocolate will still melt, but there won’t be any little bubbles that splash into your chocolate. The simplest way is to microwave the melts. I put them in a ramekin bowl (a tall glass cup if I’m dipping pretzel rods) and melt for 30 seconds at a time until smooth. Stir every thirty seconds so it doesn’t burn. It comes out perfect! While you’re dipping, if it starts to harden again, put it back in the microwave and remelt.
When I made these I used black candy melts (which I think are seasonal at Michael’s around Halloween)so I didn’t have to deal with coloring. If you color chocolate, I would buy Wilton’s candy colorings. They look like Wilton dye for icing, but they’re formulated for chocolate. Regular dye is just like water and can make the chocolate seize. I’ve gotten away with a teeny bit of regular food coloring to color the candy melts, but too much and you have to start again! Good luck! Perfect time of year for these since Peeps are everywhere!!
