We’re crazy about Peeps in our family. There’s something so cute about these little guys that can’t help but make us happy. We’re not alone either; can you believe that enough Peeps are sold each year to circle the Earth twice? Now that’s a lot of Peeps! We stock up on Peeps as soon as they hit the grocery store shelves and come up with creative ways to use them throughout the season. It was only fitting to have them make their debut this year on our Martini Monday post.
I fell in love with Blue Hawaiian cocktails at the Royal Hawaiian restaurant in Laguna Beach. These are amazing, one sip and you’ll instantly wish you were on a beach in paradise. The best part of this version is eating that sweet little garnish that has been swimming around in your martini glass. Peeps soaked in rum, now that’s something to be happy about. Blend one of these up and let’s toast to a great week ahead. A few of these cocktails are guaranteed to take your worries away!
1 oz. light rum
2 oz. pineapple juice
1 oz. blue curacao
1 oz. creme de coconut
Blend ingredients with one cup of ice in a blender at high speed. Pour and enjoy. To garnish, I melted a handful of chocolate chips in a ziploc, cut off the end and piped sunglasses on the bunny. I then cut a marshmallow to use as the floatation device – safety first, even with the Peeps!
