Pineapple Upside Down Cake Martini – When Your World’s Turned Upside Down!

Today is National Pineapple Cake Upside Down Day. I have no idea who these people are that create these holidays, but if I can enjoy a great cocktail in its honor, I don’t question it. This holiday is pretty symbolic of my life right now, which has recently been turned upside-down. I promise I’m done whining about it. I gave myself a day or two and then decided there’s a lot worse things happening in the world than having a job reassignment.

Do you remember the first time you went on a roller coaster that went upside down? I do. I was terrified! But once I had the courage to ride it, being upside down gave me a totally new perspective. And since it went so fast,  before I knew it, everything was right on track again. After the ride ended, I had to admit that being upside down was one of the best parts. Isn’t that true in life, what we fear is often filled with amazing blessings. So cheers to embracing the unpredictable ride ahead. Have a great week!   

Not only is this cocktail really good, but it also looks fabulous! The grenadine sinks to the bottom and creates a beautiful color scheme.

Pineapple Upside Down Cake Martini *

2 oz. vanilla vodka

4 oz. pineapple juice

1 oz. white cranberry juice

Splash of grenadine

Combine vodka, pineapple juice and white cranberry juice in a shaker filled with ice. Shake and pour. Add a splash of grenadine to each glass. Garnish with a cherry.

* The original recipe is just not sweet enough for me, but I know for some of you, my drinks are a bit too sweet! To tone down the sweetness, go with the original recipe which calls for equal parts vanilla vodka and pineapple juice and a splash of grenadine (no cranberry juice).
