Our summer is off to a great start. Aside from the boy getting a bad sunburn on the first day and me dealing with the mommy guilt from that, (I swear I put spf 50 on him!) we have enjoyed relaxing and catching up with friends. Aren’t your best friends the ones who understand when your life gets crazy and are right there when life calms down to pick up where you left off? I’m so thankful for this time to reconnect with the special people in my life!
Also, I think I may have found my niche…Superfood cocktails! It combines my obsession for Superfoods with my love of Happy Hour. I know raspberries aren’t always cheap, but you really do get what you pay for and go organic if you can. This martini is loaded with vitamins C & B and the raspberries are super high in fiber. Since these little berries pack a huge antioxidant punch, take advantage and indulge while they’re in season.
I love the taste of this martini! Instead of relying solely on artificial fruit flavoring, which so many cocktails do, one cup of fresh raspberries is muddled in the bottom of the shaker to bring out the fruit’s natural sweetness. This is a perfect cocktail to serve on the 4th of July. More 4th of July cocktails to come next Monday! Cheers to the last week in June and to our first full week of summer!
Fresh Raspberry Martini
(For four drinks)
- 1 cup fresh raspberries
- 2 tbsp sugar
- 1 tbsp lime juice
- 2 oz orange juice
- 2 oz baccardi razz*
- 4 oz light rum
- ice
Muddle the raspberries and sugar together in a cocktail shaker. Add the rest of the ingredients along with ice and shake well. You may need to strain the raspberry seeds through a sieve and then strain into chilled martini glasses. Garnish with fresh raspberries and lime zest.
*If you do not have Barcardi Razz rum, go ahead and substitute light rum.
