Rice Krispie Holiday Cupcake Treats

Hope everyone had a great weekend! Last Friday, my son’s school hosted a holiday boutique and a bake sale and asked parents to send in goodies for the event.

My son ran for student council this year and was voted in. (I’m secretly hoping this is the end of his political career.) His dad was elected President of his junior high though, so it seems politics may run in the family.

The student council had a big job at the holiday boutique… gift wrap. On the eve of the boutique, the boy rushed in my room before bed in a bit of a panic. The child since birth has been subjected to learning a lot of random things. That’s what happens when your parent is a a teacher. Everything is a teachable moment.  Gift wrap was a lesson I neglected to teach. So the two of us sat in our jammies and practiced wrapping a few things. (In case you receive a wrapped gift from this boutique, please know the crumple up the sides technique and add several pieces of tape is entirely his own method. I tried!)

As far as bake sales go, the most popular item is almost always the rice krispie treat. This is just from experience. I don’t think any hard data actually exists. The other thing I know about bake sales is it’s all about visual appeal. Wrap it up with a ribbon and make it look pretty and you can guarantee sales.

If you can whip up a batch of Rice Krispies, these are easy to put together. Here’s what you need:

  • pan of Rice Krispies (see original recipe here)
  • cupcake cookie cutter
  • candy melts (I use the Wilton brand which you can buy at Michael’s or most craft stores).
  • holiday sprinkles
  • piping bag & tips or a few ziplocs.

Once Rice Krispies have cooled in the pan, use a cookie cutter to cut out cupcake shapes and trim with a knife, if necessary. I was able to get eight cupcakes per pan.

Melt cocoa candy melts in the microwave (stir at 30 second intervals until smooth). Pour melted chocolate into piping bag with a medium sized round tip. Pipe chocolate in a swirl motion for the cupcake frosting. Add sprinkles before the chocolate sets. If you don’t have piping bags and tips, use a ziploc and cut off the tip.

Melt a second color of candy melts in the microwave. Pour into a piping bag with a small round tip (I used Wilton’s #2). Pipe cupcake liner shape. If using a ziploc, just cut a tiny bit off the tip. Allow chocolate to set.
