Dorothy knew what she was talking about…There’s truly no place like home! It’s been a great long weekend and our house has been filled with happiness. Maybe it’s because summer vacation is almost within our reach. Maybe it’s because the weather has been unbelievably gorgeous. I’m not exactly sure. It’s just been one of those weekends filled with little glimmers of all of the blessings in my life. Surrounded by good family, good friends, good neighbors, and a crazy pup… Life is great!
I think this calls for a toast and this week my mom is sharing the perfect drink. Her latest bunco themed party was last week and she’ll be sharing her post party recap and all of the great recipes over the next couple of days. Cheers to the four day work week ahead! Yahoo!!
Ruby Sippers
1 1/2 CUP FRESH OR FROZEN CRANBERRIES
1 CUP CRANBERRY JUICE COCKTAIL
1 CUP SUGAR
JUICE AND RIND OF 2 ORANGES
1 BOTTLE PROSECCO SPARKLING WINE
RED SUGAR FOR THE RIM AND WHOLE CRANBERRIES FOR GARNISH
1. IN A FOOD PROCESSOR PULSE 1 1/2 CUPS CRANBERRIES AND CRANBERRY JUICE COCKTAIL UNTIL BERRIES ARE COARSELY CHOPPED.
2. IN A SMALL SAUCEPAN SIMMER SUGAR, ORANGE JUICE AND RIND OVER MEDIUM HEAT UNTIL MIXTURE IS A SYRUP (ABOUT 10 MINUTES). STRAIN THEN COOL TO ROOM TEMPERATURE.
3. RUB RIMS OF CHAMPAGNE GLASSES WITH AN ORANGE WEDGE AND DIP IN RED SUGAR.
4. PLACE 1 TO 2 TABLESPOONS OF SYRUP INTO GLASSES AND TOP WITH SPARKLING WINE.
5. GARNISH WITH WHOLE CRANBERRIES.
