Summer Twist – Lemon Lime Bacardi Cocktail

I hope everyone enjoyed the holiday weekend. We spent the day celebrating with our friends and later headed over to my parents’ house for fireworks. Their balcony is our annual venue for fireworks, and this year it almost didn’t happen.

Has anyone noticed a certain someone has not posted in quite a long time? I’ll give her a break. My mom does have a good excuse for being on hiatus. About a year ago, her entire downstairs flooded. She has spent a year living in a construction area and has had to deal with a ton of different work crews. The kitchen is now the final area to be renovated. It was demoed a month ago, which forced my parents to live elsewhere. If you know my mom, you know that probably one of the worst forms of torture for her is to take away her kitchen. Her kitchen is her life! It looks like it’s still another six weeks before she will cook a meal in there.

Wait… before you feel too sorry for her, know that she’s been enjoying herself. (Is she ever not?) One of the things I admire most about my mom is that she always makes the best out of every situation. She and my dad have traveled all over California – San Diego, Wine Country, Santa Barbara, and just last week they stayed only a few miles from home in Dana Point. We decided to join them and pretended we were on vacation for a day. Check out the view from their room. This was their own private patio with a panoramic view of the harbor. If I was staying there, I would never leave. When the boy saw it he said, “Grandma, we need to have a party in here!”. She’s definitely trained him well! Yesterday they continued their adventure and set sail for a week long cruise. After what they’ve been through the past year, it’s great to see them have this time together to enjoy life.

Since there are no vacations planned in my near future, I’ve had to create a vacation atmosphere at home. That’s when I send all small children and dachshunds away, make myself a refreshing cocktail, rest on my chaise lounge, and lose myself in a good love story. Cheers to another relaxing week of summer. It’s a good life!

Lemon Lime Cocktail

10 oz. Sierra Mist

4 oz. Bacardi Llimon rum

1 lemon wedge

1 lime wedge

Squeeze lemon and lime into glasses before adding. Fill glass with crushed ice, then add the Bacardi Limon. Pour in Sierra Mist. Fills two 8oz. glasses.

    Kate, that cocktail looks great — refreshing and light. What do you think about using diet Sierra Mist? Or diet 7 Up? I am trying to lose some of those winter pounds that are still hanging on! :) Tell your mom to hang in there! I am sure her new kitchen will be even better than it was before.
