Sunflower Cupcakes… ~Flower Power~

Sunflowers make me happy! Sunflowers, KJ, and dessert make me even happier. For the longest time my son thought sunflowers were called happy flowers, and he still knows the power a sunflower has over me -I’m trying to teach the boy early about the way to a woman’s heart! I dated someone not too long ago who tried to explain to me why he didn’t believe in men giving women flowers. My response to him was, as Moxie would say, “And that’s why you’re still single!” Hmmm….maybe my bluntness has a bit to do with why I’m still single, but I’m not going to settle for a man who doesn’t believe in some level of chivalry. 

But back to my sunflowers…I made up a few batches of these cupcakes for my mom’s friend, Peggy, who hosted a reception honoring the life of her husband. A bagpiper from Ireland, dressed in traditional attire played for the guests and friends.  Relatives gathered together to celebrate and share fond memories. The centerpieces were made up of sunflowers, which symbolically was a perfect choice. Sunflowers naturally turn to face the sun. They literally seek out the light, hence the name “sunflower”.

The cupcake idea came from one of my favorite cupcake books, Hello Cupcake. I made a batch of vanilla cupcakes with chocolate buttercream to add a little variety. More cupcakes will be coming soon. I’m currently having compulsive cupcakes thoughts!
