Thanksgiving Turkey Sundaes… Because Not Everyone Likes Pie

Okay, call me untraditional, but the truth is there is a whole population of people who aren’t fans of Thanksgiving pie. Most of the non-pie lovers will be sitting at the kiddie table, and as for the rest of them, we’re still wondering how they graduated from the kiddie table. This year, in addition to apple pie, we’re starting a new tradition,  ”Turkey Ice Cream Sundaes”. (Sorry Dad, you’ll have to wait another year for the lemon pie!)

There are two great tools I used for this recipe. The first is a mini spring form pan. They come in a set and can be used for a ton of different recipes. I’ve done mini cheesecakes, ice cream cakes, and chocolate mini layer cakes, just to name a few. These are perfect portion control. Each mini pan is about two servings. The second tool is the Ice Cream Scoop and Stack made by Cuisipro. Those of you who remember going to the ice cream counter at Thrifty’s will appreciate the shape of the scoop.

Recipe

brownie batter

ice cream

waffle cones

chocolate chips

Make up a batch of your favorite brownie batter and fill mini springform pans 1/2 full. Cook for approximately 20 minutes at 350 degrees. Cool completely. Use the Scoop and Stack (or a regular ice cream scoop) and make enough scoops for the number of brownie mini cakes you are making. Put the ice cream on a baking sheet, (covered with waxed paper) and freeze until ready to assemble. Break waffle or sugar cones into triangular shaped pieces (They don’t have to be perfect!). Melt one cup of chocolate chips in the microwave until melted. Don’t overcook. Dip the pointed parts of the cone pieces into the melted chocolate and add sprinkles.

To assemble:

Place ice cream scoop on the mini brownie cake for the turkey’s head. Insert the waffle cone feathers” into the back of the brownie cake. This gets a little tricky. I cut slits in the back and then gently pushed the waffle pieces in. You have to work fast before the ice cream melts. Add m&m’s or other candies for the eyes. Use a slice of strawberry, red licorice piece, or hot tamale for the waddle and a candy corn for the beak. There you have it…EASY AS PIE!!
