The Ultimate Thin Mint Martini

An Irish Blessing for St. Patrick’s Day

I’ve been thinking about this cocktail ever since the Girl Scout cookies arrived. I thought St. Patrick’s Day would be the perfect occasion to try it. The neon green martinis that I posted last week are perfect served with appetizers, but this one is definitely a dessert martini. Rimmed with thin mint cookies, mixed with De Kuyper’s Creme de Menthe, and garnished with Junior Mints – this is the ultimate Thin Mint Martini. Happy St. Patrick’s Day!

Thin Mint Martini

2 oz. De Kuyper’s Creme de Menthe (The De Kuyper’s brand has a beautiful deep green color.)

2 oz. White Creme de Cacao

2 oz. half and half

Crushed Oreos

1/4 c. chocolate chips or chocolate wafers

Junior Mints

Rim a martini glass with crushed Thin Mint cookies or Mint Oreos. Melt chocolate chips or chocolate wafers in the microwave (Make sure you stir every 15-30 seconds to avoid burning.) Spoon melted chocolate in a Ziploc and snip off one of the bottom corners. Pipe chocolate stripes starting at the bottom of the glass and piping toward the rim of the glass. Allow the chocolate to set. Put liquid ingredients in a martini shaker filled with ice. Shake and pour. Garnish with a few Junior Mints on a toothpick.
